This traditional rice pudding from the royal kitchens of Hyderabad is a creamy delight that will tantalize your taste buds and leave you craving for more. In this article, we'll take you through a simple yet decadent recipe to whip up Hyderabadi Phirni in your home.

Ingredients:

1/2 cup Basmati rice
1 liter full-fat milk
1/2 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
A pinch of saffron strands
2 tablespoons chopped nuts (almonds, cashews, pistachios)
1 tablespoon rose water
Edible silver leaf (optional, for garnish)
Instructions:

Preparation: Rinse the Basmati rice under cold water until the water runs clear. Soak the rice in enough water for about 30 minutes. After soaking, drain the water and grind the rice to a coarse paste using a blender or food processor.

Cooking the Rice: In a heavy-bottomed pan, heat the milk over medium heat until it comes to a boil. Once the milk starts boiling, reduce the heat to low and add the ground rice paste to the pan, stirring continuously to prevent lumps from forming.

Simmering: Allow the rice to cook in the milk, stirring frequently to prevent sticking to the bottom of the pan. Cook until the rice is soft and the mixture thickens to a creamy consistency, which may take about 20-25 minutes.

Sweetening: Add sugar to the pan and continue to cook the mixture until the sugar dissolves completely and the phirni thickens further. Stir in the cardamom powder and saffron strands, infusing the phirni with their aromatic flavors.

Finishing Touches: Once the phirni reaches the desired consistency, remove it from the heat and stir in the chopped nuts and rose water. 

Chilling: Transfer the prepared Hyderabadi Phirni to individual serving bowls or a large serving dish. Cover the phirni with plastic wrap or a lid and refrigerate for at least 2-3 hours, allowing it to chill and set.

Garnishing: Before serving, garnish the chilled phirni with an edible silver leaf (varq) for an extra touch of elegance and indulgence.
