Chaitra Navratri will commence on April 9, 2024, and will conclude on April 17. During this period, people observe a fast of nine days for worshipping Goddess Durga. To prepare Navratri food thalis, ghee is considered an important element of it. While some believe that it’s challenging to cook without ghee during Navratri, it’s indeed possible. Even with minimal use of ghee, you can easily prepare a delectable Navratri thali at home. 

Sabudana Kheer

Sabudana kheer is easy to prepare and is more nutritious than the one made with rice. Simply cook soaked sabudana in milk over low flame, adding in raisins, cashew nuts, sugar, and almonds for rich flavour. 

Peanut Sundal 

Begin by soaking peanuts in water for two hours. Once soaked, cook the peanuts in a pressure cooker. In a separate pan, heat some ghee and add cumin seeds and green chillies. Next, add the boiled peanuts, rock salt, and grated coconut to the pan. Cook the mixture for a few minutes and then turn off the gas. Transfer the peanuts to a bowl and serve it as a side dish. 

Green chutney

Use fresh and washed coriander leaves. Chop them and add them in a grinder. Add a small piece of ginger, grated coconut, rock salt and green chillies. Also add a little water to help with the grinding process. Grind the mixture until smooth. 

Cucumber Raita

In a mixing bowl whisk plain yogurt. Add grated cucumber and chopped coriander leaves to it. Add rock salt as per your tase. Stir the ingredients together and then refrigerate it for about 30 minutes. Serve this refreshing raita with your Navratri meal. 

Singhada (Water Chestnut) Paratha

In a food processor, grind potatoes, ginger, and green chilli and form a paste. Transfer the mixture to a mixing bowl, and add water chestnut flour, black pepper, rock salt, chopped coriander leaves and a little water. Mix everything together and form a dough. Allow the dough to rest for ten minutes. The proceed to make the parathas as you regularly make them. Serve the Singhada parathas with the other delicious accompaniments. Enjoy your nutritious meal!
