As the temperatures rise and the sun beats down, there's nothing quite as satisfying as a tall glass of shikanji. Also known as nimbu pani, this drink is just perfect for cooling you off during summer. The delightful blend of lemon, sugar, and black salt make it ideal for serving guests. Here is an easy recipe for making Shikanji at home.

Ingredients you are going to need:

•    2-3 fresh lemons
•    4-5 tablespoons sugar 
•    1 teaspoon black salt
•    1 teaspoon roasted cumin powder
•    1/2 teaspoon ground black pepper
•    1 litre chilled water
•    Ice cubes 

Follow these instructions:

Step 1- Take the lemons, cut them in half and squeeze out the juice. You can use a juicer for this purpose, or you can do it by hand. Store it in a container and remove the seeds. 

Step 2- In a bowl, add sugar, black salt, roasted cumin powder and black pepper. You can skip adding black pepper if you like. Mix the ingredients well. 

Step 3- Take a jug or a large pot, pour chilled water. 

Step 4- Add the lemon juice to the water and mix well. 

Step 5- Add the mixture of salt and sugar to the lemon water. Stir well. 

Step 6- Taste the shikanji and add more sugar if required. If it tastes perfect, leave it as it is. 

Step 7- If you prefer, you can also add mint leaves to the mixture. 

Step 8- Add ice cubes to the jug and mix well. 

Step 9- Pour the chilled shikanji into glasses.
