Ramadan 2024: The easiest recipe for making traditional Sheer Khurma at home

It is the holy season of Ramadan, and it calls for indulging in a variety of delectable dishes to break the fasts. Sheer Khurma is a traditional dish that is popular across various cultures. This rich and creamy dessert made with milk and vermicelli is a favourite of many. Today, let’s learn how you can make this delightful dish at home for Iftar meals. 

Ingredients you are going to need

•    1 cup of vermicelli (sewai)
•    1 litre of milk
•    ½ cup of sugar
•    2 teaspoons of ghee
•    10-12 cashews, almonds, pistachios, and raisins
•    2-3 green cardamom 
•    A pinch of saffron threads
•    1 teaspoon of rose water
•    Chopped dates and figs

Follow these instructions to prepare delicious Sheer Khurma

Step 1- Start by chopping the nuts i.e., cashews, almonds, and pistachios into tiny pieces. Then, crush the cardamom and remove the seeds. 

Step 2- Next, roast vermicelli. Heat ghee in a pan over medium flame. Add the vermicelli and fry until it turns golden brown. Keep stirring it continuously to avoid over roasting. Once done, remove them from the pan and set it aside. 

Step 3- In the same pan, roast chopped nuts until they turn light brown in colour. Then, add the raisins to the pan and fry for a few seconds. Ensure that you don’t over roast the nuts. After roasting, keep the nuts aside. 

Step 4- In the same pan, add the milk and bring it to a boil over medium heat. Keep stirring and then allow the milk to simmer until it thickens. This process may take around 20-25 minutes. 

Step 5- Once the milk thickens, add the roasted vermicelli to the boiling milk. Cook it until it becomes soft, and the mixture thickens further. 

Step 6- Mix the sugar and crushed cardamom into the milk. Stir the Sheer Khurma until the sugar dissolves. 

Step 7- Proceed to add saffron to Sheer Khurma for colour and enhanced aroma. If you want, you can also add shredded coconut for better texture. 

Step 8- When Sheer Khurma achieves the desired texture, add the roasted nuts, raisins, and dried figs to it. Mix everything well. 

Step 9- For the last step, add rose water to Sheer Khurma and allow it to cool for a few minutes. As per one’s liking, it can be enjoyed both hot or cold.
