2 cups of whole wheat flour (atta)
1 cup of water
1 tablespoon of oil
1 teaspoon of salt
1 teaspoon of black pepper
1/2 cup of finely chopped vegetables (carrots, bell peppers, cabbage, etc.)
2 tablespoons of tomato ketchup
1 tablespoon of soy sauce
1 tablespoon of vinegar
2 cloves of garlic, minced
1 small piece of ginger, grated
Oil for frying


1. Prepare the Atta Dough:
In a large mixing bowl, add the whole wheat flour, salt, and black pepper.
Water should be added gradually while kneading the dough until it comes together and is smooth.
After covering the dough, give it a 15 to 20-minute rest.

2. Roll and Cut the Noodles:
After resting, divide the dough into small portions and roll them out into thin sheets on a floured surface.
Using a sharp knife, cut the rolled-out dough into thin strips to make noodles.

3. Cook the Noodles:
In a deep fryer or kadhai, warm the oil over medium heat. Once the oil is hot, carefully add the noodles in batches and fry until they turn crispy and golden brown. Eliminate and pour away surplus oil onto paper towels.

4. Prepare the Vegetable Sauce:
In a separate pan, heat a tablespoon of oil over medium heat.
Add the grated ginger and minced garlic, and sauté until aromatic. 
Add the finely chopped vegetables and stir-fry for a few minutes until they are slightly tender.
Add tomato ketchup, soy sauce, and vinegar to the vegetables, and mix well. Cook for another minute.

5. Combine Noodles and Sauce:
Once the vegetable sauce is ready, add the fried noodles to the pan and toss gently until they are well coated with the sauce.

6. Serve and Enjoy:
Transfer the Atta Fry Noodles to a serving plate and garnish with chopped spring onions or cilantro.
