The season of summer is the best time to enjoy kulfi. This traditional Indian frozen dessert offers a rich creamy texture with delectable flavours. Here’s a simple recipe that you can follow to make kulfi at home. 

Ingredients you need:

•    1 litre full-fat milk
•    /2 cup sugar (according to taste)
•    1/2 cup khoya  
•    1/4 cup chopped nuts (almonds, pistachios, cashews)
•    1/2 teaspoon cardamom powder
•    Saffron strands 
•    Kulfi moulds or small cups 

Follow these instructions:

Step 1- In a pan, bring milk to a boil over medium heat. Keep stirring the milk. 

Step 2- When the milk comes to a boil, reduce the heat and let it simmer. Continue stirring. 

Step 3- After 20-25 minutes, when the milk reduces to about half of its original quantity, add sugar and khoya to it. Mix everything well. 

Step 4- Then add cardamom powder, chopped nuts, and saffron strands. If you like, you can skip adding the saffron strands. 

Step 5- Mix well and continue to simmer for another 5-10 minutes until the mixture thickens.

Step 6- Turn off the heat and allow the mixture to cool slightly.

Step 7- Pour this prepared kulfi mixture into kulfi moulds or small cups. 

Step 8- Cover the moulds with aluminium foil and then insert popsicle sticks. 

Step 9- Place these moulds in the freezer and let them freeze for at least 6 to 8 hours. 

Step 10- Before serving, gently remove the moulds from kulfi. Ensure you don’t break them. 

Step 11- For more taste, garnish with chopped nuts or sprinkle a little cardamom powder on top.
