During Eid celebrations, relatives and friends often pay visits for extending greetings. And when guests arrive, you must welcome them with delectable dishes. However, preparing several dishes in one day can indeed be quite overwhelming. Are you wondering if there is a basic gravy recipe that can be used to make both vegetarian and non-vegetarian dishes? Then worry not, today, we have brought a recipe for a versatile gravy which can be used to prepare ten different types of dishes. 

Ingredients you are going to need

•    4 large tomatoes
•    2 chopped onions
•    8-10 cashews
•    1 small piece of ginger
•    4 cloves of garlic
•    2 tablespoons of butter
•    1 tablespoon of oil
•    1 teaspoon of cumin
•    1 bay leaf
•    4-5 green cardamom
•    2-3 cloves
•    1 piece of cinnamon stick
•    1 teaspoon of red chilli powder
•    1 teaspoon garam masala
•    1 teaspoon Kasoori Methi
•    Salt to taste
•    ¼ cup fresh cream
•    Fresh coriander

To prepare the gravy base:

Step 1- Take a saucepan, and add chopped tomatoes, onions, cashew nuts, ginger, garlic cloves and water. Bring it to a boil.

Step 2- Cook on low heat for 10-15 minutes until the tomatoes become soft and pulpy. 

Step 3- Remove from the flame and let it cool slightly.

Step 4- Make a smooth paste using a blender. 

Step 5- Remove coarse particles from the paste if any. Keep the paste aside for further use. 

Step 6- Heat butter or oil in a pan over medium heat. Add cumin seeds, bay leaves, cardamom, cloves, and cinnamon. 

Step 7- Add the prepared cashew tomato paste and mix well. 

Step 8- Then add red chilli powder, garam masala, dry fenugreek leaves, and salt to taste. Mix thoroughly. 

Step 9- Let the gravy simmer for 5-10 minutes. If the gravy is thick, you can add some water to it.

Step 10- Finally, add fresh cream to the gravy and mix well. Maintain a good consistency of the gravy. 

Step 11- Allow it to cook for another 2-3 minutes.

Your gravy is now ready to be used in dishes such as Paneer Makhani, Butter Chicken, and many more. Serve and enjoy it with naan, roti, or rice.
