How to make perfect and fluffy bhatura at home

Bhatura, a popular Indian bread, is served with delicious Chole. This mouthwatering combination is a favourite of many. However, making bhaturas at home can be a challenging task if you’re new to cooking. Here's a step-by-step guide to making fluffy bhaturas at home:

Ingredients you are going to need:

•    2 cups all-purpose flour (maida)
•    1/4 cup semolina (sooji/rava)
•    1/4 cup yogurt (dahi)
•    1 teaspoon sugar
•    1/2 teaspoon baking powder
•    1/4 teaspoon baking soda
•    Salt to taste
•    Water
•    Oil 

Follow these instructions:

Step 1- In a large mixing bowl, mix together maida, sooji, sugar, baking powder, baking soda, and salt.

Step 2- Add yogurt to the dry ingredients and mix well.

Step 3- Add a little water and knead the mixture into a soft dough. The dough should be slightly sticky but not too wet.

Step 4- Cover the dough with a damp cloth or plastic wrap and let it rest for at least 2 hours.

Step 5- Divide the dough into small balls. Roll each ball between your palms to make them smooth and round.

Step 6- Flatten each ball slightly with your hands into the shape of a bhatura. 

Step 7- Apply dry maida to prevent sticking. If flattening the balls with your palm seems difficult, you can also use a rolling pin for the same purpose. The thickness should be uniform, neither too thin nor too thick.

Step 9- Heat oil in a deep frying pan or kadhai over medium-high heat. The oil should be too hot.

Step 10- Gently slide the rolled-out bhatura into the hot oil, one at a time.

Step 11- Press the bhatura lightly with a slotted spoon as it puffs up.

Step 12- Fry the bhatura until it puffs up and turns golden brown on both sides, flipping it once or twice during frying. This should take about 2-3 minutes per bhatura. Then remove it from oil. 

Step 13- Drain excess oil by placing the bhatura on paper towels.

Step 14- Repeat the process to make more bhaturas. 

Your bhaturas are ready to be served. Enjoy them with delicious chole for a satisfying meal.
