Kadhi Chawal is a comforting North Indian dish loved by many. Its simple yet satisfying taste makes it a popular choice for both everyday meals and special occasions. Let’s read this easy-to-follow recipe and learn how to make it at home.
Ingredients you are going to need:
• 1 cup yogurt
• 3 tablespoons gram flour (besan)
• 2 cups water
• 1 tablespoon ghee or oil
• 1 teaspoon cumin seeds
• 1 teaspoon mustard seeds
• 1-2 dried red chillies
• 1/2 teaspoon fenugreek seeds (methi)
• 8-10 curry leaves
• 1 inch ginger (finely chopped)
• 2-3 green chillies
• 1/2 teaspoon turmeric powder
• 1 teaspoon red chilli powder
• Salt to taste
• Fresh coriander
• Rice
For pakoras
• 1/2 cup besan
• 1 small onion
• 1-2 green chillies (finely chopped)
• 1/2 teaspoon turmeric powder
• Salt to taste
• Water
• Oil
Follow these instructions:
Step 1- In a mixing bowl, whisk together yogurt and besan until smooth. Gradually add water while whisking to ensure there are no lumps.
Step 2- Heat ghee or oil in a large pot or kadhai over medium heat.
Step 3- Add cumin seeds, mustard seeds, dried red chillies, fenugreek seeds, and curry leaves. Sauté.
Step 4- Add chopped ginger and green chillies. Sauté for a minute.
Step 5- Lower the heat and slowly add the yogurt mixture while stirring continuously.
Step 6- Add turmeric powder, red chilli powder, and salt. Mix well.
Step 7- Cook the kadhi on low heat for about 20-25 minutes, stirring occasionally. Allow it to thicken. Add water if needed.
Step 8- Meanwhile, prepare the batter for pakoras. In a separate bowl, mix besan, chopped onion, green chillies, turmeric powder, and salt. Add water to make the batter thick.
Step 9- Heat oil in a pan over medium-high heat.
Step 10- Make small-sized pakoras and fry until golden brown and crispy. Drain the excess oil by placing them on paper towels.
Step 11- While the kadhi is being cooked, prepare rice in a pressure cook the usual way.
