With the festival of Holi just around the corner, you must be getting excited to buy quirky water guns from the markets, and delectable sweets to impress your guests. While homemade Gujiyas may not match the ones made by professional Halwais, employing a few simple tricks can help you achieve the perfect texture. 

Ingredients
Half kg of flour (approximately 4 cup)
Pinch of salt 
¼ cup of ghee
200 gram khoya
Half cup Rava (sooji/semolina)
One cup of sugar syrup
Half cup sugar

Recipe for making the perfect Gujiya

Step 1: To prepare the dough, start by taking four cups of flour and adding a pinch of salt to it. Add ghee into the flour and mix it thoroughly. Knead the dough, adding small amounts of water as needed, until it reaches a smooth consistency. Allow the dough to rest for about 15 minutes.

Step 2: Meanwhile, in a separate pan, heat 200 grams of khoya, stirring continuously until it turns golden brown. Remove the khoya from the pan and set it aside. In the same pan, add two tablespoons of ghee and fry rava/sooji until lightly golden. Next, mix in grated coconut and dry fruits such as pistachios, almonds, and raisins. Stir the mixture for a few minutes before turning off the heat and adding sugar to taste.

Step 3: With the stuffing prepared, divide the dough into small balls. Roll out each ball into a thin circle and place it in a Gujiya mould. Lightly moisten the edges of the dough with water and seal them. Fill each mould with the prepared stuffing and seal the Gujiya carefully.

Step 4: Finally, fry the Gujiya in ghee over medium heat for approximately 4 to 5 minutes, or until they turn golden brown. Remove from the heat and allow them to cool before serving.

How to make the sugar syrup?

In a pan, combine 1 cup of sugar with slightly more than half a cup of water. Stir the mixture over medium heat until the sugar dissolves completely. Maintain a thin syrup consistency rather than a thick one. This will take about five minutes. Once the syrup has cooled down slightly, dip the Gujiyas in it. This process gives the Gujiyas a delicious coating, which will help you make the perfect Gujiyas at home just like those prepared by professional Halwais.
